Victor is a member of the Kailis family, which originated from the Greek island of Kastellorizo. His father, George P Kailis, followed in the footsteps of his seafaring ancestors by pioneering seafood opportunities in Western Australia. In 1928 he founded the seafood business G.P. Kailis & Sons. George and his wife Evangeline had six Children four sons and two daughters. Three of his sons followed his example and made successful careers in the Australia seafood industry.
Victor, the youngest son, worked at Kailis & France Pty Ltd, Australia's largest integrated seafood company, with his brother Theo for 17 years. The business included vessel ownership, seafood processing and packaging, distribution, research and development, offshore operations and marketing.
During Victor's tenure at Kailis & France, he successfully managed the Fish Canning Division of the Group as a Director and Shareholder. He was responsible for increasing sales of canned seafood's significantly, initially with the Company - owned Seahaven Brand, and he then managed the introduction of generic and house brands into prominent Australian supermarket chains. Victor was also principally responsible for the development and success of the John West canned tuna product line.
In 1982, Victor was appointed Group Marketing Director, Kailis & France, with responsibility for sales in excess of $100 million per annum. Products included Lobster, Prawns and value added seafood meals. In 1987, he was selected as Moderator of the World Shrimp/ Prawn Panel at the International Seafood Conference held in Monaco.
In 1989, Victor took operational control and ownership of a family retail outlet located in Fishing Boat Harbour Fremantle. He rebranded the business as Kailis' Fish Market Cafe, using the original logo developed by his father, and focused primarily on the tourist industry. The business was transformed by extending the exterior boardwalks, redesigning the interior and introducing exciting new menus, alcoholic beverages and café services.
Over the ensuing years, Victor's business has garnered numerous accolades and awards. On three occasions, it has won the coveted Sir David Brand Award for best popular restaurant and food service for tourists, resulting in its induction in perpetuity into Western Australia's Tourism Hall of Fame. The restaurant complex has been voted Best Fish & Chips in the Metropolitan Zone at the Western Australian Fishing Industry Awards and Victor has been named Employer of the Year by the Restaurant and Caterers' Association of Western Australia.
With his son George, who is responsible for the day-to-day management and business development, Victor continues to operate and grow their successful business by direct daily involvement. They continue to be dedicated and passionate about the pursuit of excellence.
